Mike, I visited Delaware Phoenix earlier this year and was surprised to find out that Cheryl has no mashing facilities, since she simply re-distills GNS for her primary product, absinthe. Instead, she does six separate mashes in the still to make enough beer to distill into one run of Rye Dog. Pretty ingenious, but labor-intensive. One of the reasons it retails for upwards of $70.
By the way, I think it's a great spirit, too!
