Well, I feel guilty...y'all been cooking without me. Okie Dokie, since you seem to be into the beef & Bourbon thing, here's a good one. It's really quick, and great with a salad and a side for an intimate dinner for two:
2 6oz. filets
1/2 cup butter
4 oz. fine aged Kentucky Bourbon
Fresh ground pepper
Saute' the filets in the butter on high heat until medium rare and plate. Deglaze the pan (scrape well) with the Bourbon, then drizzle the Bourbon butter and grind the pepper over the filet . Salt to taste.
I can't take credit for this recipe. I just condensed it from a recipe in Col. Mike Masters' book, 'Hospitality - Kentucky Style. It's a great book. The only thing I changed was the cook time. I prefer my steak rare (salad isn't food...it's something 'food' eats... ) and I may have accidentally splashed in a little extra Bourbon...
