Gary,
How long has your bottle been open? I noticed apple notes on John's bottle and also some when I let the whiskey from my bottle sit for some time. I am assuming that trhe apple fruit will come as it breathes or is exposed to more air in the bottle.

I opened it shortly after returning from the last KBF, so a few weeks basically. It is hard to say if it has changed since I first tasted it. I don't think it has, really. There seems an apples or pears note to it somewhat like in WR or maybe that is the pot still character speaking. I wonder what kind of yeast was used to ferment the mash...

Gary,
My bottle does not have that apple when first poured, but gets it as it breathes. It has been open a week today. If it has the apple in another week or so, then I would say that it comes into that flavor as it is exposed to air. Of course you really need to have several bottles of this whiskey to see if I have an unusual bottle or if it all does this.

These things are hard to pin down. I tend to agree that the estery notes seemed lesser (at least) when I first opened it. Perhaps exposure to air has caused some esterification of the fusel oils. It's hard to say, again. However, why wouldn't this have happened earlier, when the whiskey was sitting in a partly filled barrel or when it was exposed to air when dumped? So I tend overall to think that it hasn't changed much since opening. (Shucks if they do change that much what does this mean for whiskey in old bottlings...!?).

I have had old whiskey that was almost undrinkable when first opened that became extraordinary after breathing for a half an hour. I Think that the need to breath night be a characteristic of lower distillation/barrel proof whiskey.
