Drunken Apples

Drunken Apples
6 large apples, peeled, cored and sliced
1/4 tsp. cinnamon
1/4 tsp. salt
1 Tablespoon lemon juice
3 Tablespoons Bourbon (or to taste... :wink: )
1/4 cup water
3/4 cup brown sugar
1/4 cup flour
1/3 cup butter


In a large skillet or saucepan, melt butter over medium heat; add apples. Cook, stirring constantly, until apples are almost tender, about 6 to 7 minutes.

Add flour to skillet slowly and let it cook, adding water slowly. The bubbling flour and butter will begin to look smoother. Stir in brown sugar and cinnamon. Cook for 2 minutes, stirring occasionally. Remove from heat and add Bourbon. Serve warm.

Can be drizzled over pancakes or waffles for a great breakfast.[/b]

Actually, this is a pretty delicate recipe.

Just be sure to use only Bourbon that you would drink straight. Once you've cooked it, all you're left with is the flavor of the Bourbon. If you want to retain the alcohol (personally I do), the important thing is not to add the Bourbon until the very last.

Yepper, The four food groups in Kentucky are Sugar, Grain, Alcohol and Meat... :P

I was misinformed. I thought the four food groups were bacon, ham, sausage and ribs.

Not exactly, looks like you'll be left with at least 40% retained....

Alcohol Burn-off Chart:

Preparation Method / Percent Retained

alcohol added to boiling liquid & removed from heat / 85%
alcohol flamed / 75%
no heat, stored overnight / 70%
baked, 25 minutes, alcohol not stirred into mixture / 45%

Baked/simmered dishes with alcohol stirred into mixture:
15 minutes cooking time / 40%
30 minutes cooking time / 35%
1 hour cooking time / 25%
1.5 hours cooking time / 20%
2 hours cooking time / 10%
2.5 hours cooking time / 5%

BTW ... thanks for the recipe ..... gonna try it tonight. Sounds like a new item for TomH's parties...... :D

Even though this is an old post, I want to add my two cents. This is a perfect recipe to use in the fall when the apples are at their best. I plan to use it some Friday night after eating stew. We could curl up near the warm fireplace and start the weekend right by relaxing. Whipping cream would add to it.

Thanks a lot for the tip. it is really very important. I even did not think about the apples in the fall!
