Chef John Castro, Executive Chef of Winston's Restaurant (Winston's is the flagship of Louisville's Sullivan University). John Castro is Joe Castro's brother. Until a couple of months ago, Joe Castro was the Executive Chef for the Brown Hotel http://www.brownhotel.com/dining/index.html
...which is the home of the Hot Brown. (he was replaced by Chef Laurent Géroli, I promise to go try his food and give you an update)
John Castro is known for his Not Brown,
which involves fried green tomatoes and seafood.
The show is on as I type this. It will air again on the Food Channel at 3:30am tomorrow, 11pm on Sunday and 2:00am Monday.
