Bourbon Balls

My mother has made this recipe for many years and it is excellent. I recently found the exact same recipe in a vintage Old Fitzgerald Holiday Recipe booklet. I'll have to have a chat with Mom...

BOURBON BALLS
(36-42 balls)

1 cup pecans, very finely chopped
2 tablespoons cocoa
1 1/2 cups confectioner's sugar, divided
2 tablespoons white corn syrup
1/4 cup bourbon

For best flavor I highly recommend using the fullest flavor bourbon you have. Stagg and Rare Breed are excellent choices.

Mix well the vanilla wafer crumbs, cocoa, 1 cup of confectioner's sugar, and pecans.

Add the corn syrup and bourbon; mix well.

Shape into 1-inch balls and roll in the remaining confectioner’s sugar,

Put in a tightly covered tin box or other metal container for at least 12 hours before serving.

Note: These cookies keep well for 4 or 5 weeks.
1 Box vanilla wafer = 3 cups (12 oz.) vanilla wafer crumbs

The best bourbon balls I ever had in my life were at a Gazebo event and I think Bobby Cox from Bardstown brought them. They had Stagg for the bourbon and were just amazing. I've had other good ones (in fact, never had a bad one!) but those Stagg ones stand out.

Bet I couldn't eat just one of these!

Glad I have been straightened out on 'bourbon balls'. I always thought 'bourbon balls' was what you got when you drank a bit too much bourbon, and were unsuccesful in your demonic pursuit of women.

The recipe didn't say how much vanillia wafer you used. I am assuming one box from the box is equal to # of cups. Can you clarify for me?

This recipe says 2 cups of chocolate wafers, which I couldn't find, so I bought vanilla. I don't know if I'll add the cocoa or not. http://www.seriouseats.com/recipes/2010 ... okies.html

These looked good, so I went to check the pantry. Had everything, so I made them. They are SO good. The spousal unit said I shouldn't leave them with her this evening when I went to work. I told her leave em alone or I would take the night off and make up a couple more batches. hehe...Now that is a problem I don't mind having.

think I'll make some of these this weekend. we usually only make a batch around xmas but hell this is easy enough to make anytime of year.
